Peanut Brittle

Ingredients

•2 cups Sugar
•1 cup LIGHT CORN SYRUP
•1/4 cup Water
•2 cups RAW PEANUTS
•3 tablespoons BUTTER
•1 teaspoon VANILLA EXTRACT
•1 teaspoon BAKING SODA
•1/4 teaspoon Salt
•1 * CAN ADD JALEPENO PEPERS TO MIX FOR A SPICY BRIT

Instruction

Add sugar, corn syrup and water and place in a large saucepan. Cook until sugar dissolves on a medium-low heat, stirring constantly to avoid buring sugar. Then, place a lid and cook over medium heat for 2-3 minutes to wash down sugar crystals from sides of pan. add peanuts; cook, stir occasionally, until mixture reaches hard crack stage (300) remove from heat. Stir in butter, vanilla, soda, and salt. Work rapidly and pour mixture into a buttered 15 x 10 x 1 inch jellyroll pan; spread in a thin layer. let cook completely; break into pieces. Stir in an airtight container.
