ROAST BEEF AND BEETROOT SALAD WITH ORANGE
INGREDIENTS :
- 8 ounces of cooked, thinly sliced boneless lean roast beef
- 3-4 cups torn romaine lettuce leaves
- 1 medium thinly sliced onions
- 2 medium sized peeled and cut in to thin wedges orange
- 1/2 jalapeno pepper
- 2 teaspoons vegetable oil
- 1 cup sliced cooked beet
- 2 tablespoon red wine vinegar
- 1/2 teaspoon salt
METHOD :
To prepare the salad - combining lettuce, roast beef, oranges, pepper and onion in a medium bowl, set aside.
To prepare the dressing - combine vinegar, oil and salt in small jar with tight fitting lid or small bowl; cover and shake well or blend until combined.
Pour dressing over the salad, toss to combine.
Arrange 1/4 cup beetroots on each salad plates.
Top each with ab equal amount of salad.
Makes 4 servings
