SHRIMP QUESADILLA
INGREDIENTS:
- 4 flour tortillas ( 9-10 inches diameter)
- 1 medium sized tomato
- 1/4 cup bacon pieces
- 2 ounces frozen cooked salad shrimp, thawed and rinsed
- 1 cup cheese with jalapeno peppers
METHOD :
- Heat 10 inch non-stick skillet over medium-max heat. Place one tortilla on skillet. sprinkle with 1/4 cup cheese and 1/4 of tomato, shrimp and bacon.
- Sprinkle with extra 1/4 cup of cheese. Top with another tortilla.
- Cook 1.30 - 2.00 mins or until the bottom is get golden brown. Then, turn and cook 1.30 - 2.00 mins until the bottom is golden browned.
- Repeat this 3 or more times with remaining ingredients.
- Cut the quesadillas into pieces as you need.
