Apricot Fish with Tomato

APRICOT FISH WITH TOMATO


INGREDIENTS : 

  • 1 1/2 pound halibut fish steaks
  • 2 1/2 tablespoons vinegar
  • 1/2 cup apricot preserves
  • 1 1/2 teaspoons chopped, fresh tarragon leaves
  • 2 medium fresh tomatoes, sliced thinly 


METHOD :

Set the oven control to broil.

Grease the broiler pan rack.

Place halibut fish steaks on rack in pan.

Broil with top about 4 inches from heat  3 - 4 minutes, turn.

Broil about 3 - 4 minutes longer or until fish flakes easily with the fork.

Mix remaining things; spoon on to fish.

Broil one minute longer and serve with tomatoes.

Time 15 minutes
