Cajun Pork Tenderloin with Vegetables

CAJUN PORK TENDERLOIN WITH VEGETABLES



INGREDIENTS:


  • 1 pound pork tenderloin
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 2 teaspoon Cajun Seasoning 
  • 2 medium potatoes
  • 1 1/2 cups of small onions
  • 1 pound small zucchini
  • 2 tablespoon butter 

DIRECTIONS:


Heat oven to 425 degrees.
Rub seasoning in to pork, and place in ungreased jelly roll pan ( 15 12/ x 10 1/2 x 1 inches )

Cut the zucchini  and potatoes lengthwise into halves.
Place zucchini  and potatoes, onions and zucchini  around pork.
Drizzle butter over the vegetables and sprinkle with thyme and salt.

Uncover and roast about 30 - 35 minutes.
Loosely cover the pan with an aluminum foil and let stand 12 minutes. 
Cut pork into small slices and serve with vegetables.
