Cheesy Chicken and Rice Casserole

CHEESY CHICKEN AND WILD RICE CASSEROLE


This one is yummy, delicious and kid pleasing

INGREDIENTS : 


  • 1 diced white onion
  • 3  diced stalks celery
  • 3 tablespoons olive oil
  • 2 diced carrots 
  • 2 tablespoons of minced garlic
  • 2 1/2 cups of shredded chicken breast
  • 15 ounces of wild rice
  • 1 cup white rice
  • 3 tablespoons butter
  • 1 cup vegetable broth
  • 1/4 cup whole wheat flour
  • 4 cups shredded cheddar cheese
  • Salt 
  • Pepper and garlic salt

METHOD : 

Pre-heat oven to 340 - 360 degrees. 
In a medium pan, heat oil, garlic, onions, celery and carrot for 8 - 12 minutes, over medium heat.
Prepare the white rice and wild rice as instructed on package.
Stir rice and chicken, little bit of salt, garlic salt and pepper.
Reduce heat to low.
In a pan melt butter, over medium heat.
Whisk in flour, vegetable broth and and sprinkle of pepper and salt.
Continue to whisk until boiling.
Add 2 cups of shredded cheese; continue stirring until melt.
Transfer mixture of rice and chicken to a greased baking dish, ( 9 x 13 ).
Pour cheese sauce over the rice; top with the remain cheese. 
Bake for 32 - 35 minutes and serve warm.
