LAMB LOAF WITH SAUCE
INGREDIENTS :
- 1 pound 14 ounces of lean ground lamb
- 2 crushed garlic cloves
- 1 1/2 teaspoons salt
- 1/2 medium, seeded, pared and minced cucumber
- 3 small chopped celery stalks
- 1/2 medium chopped bell pepper
- 1/4 cup of tomato sauce
- 1/4 cups mince mint leaves
- 3/4 black pepper teaspoons
- 1 teaspoon dried oregano
- 2 medium chopped fresh onions
- 1 1/4 plain yogurt and
- 1/2 cup plain dried bread crumbs
METHOD :
Set oven to preheat 350 degrees.
Spray 8" x 4" loaf pan with non-stick cooking spray.
Set colander into sink and add cucumber and 1/2 teaspoon salt toss to combine.
Place plate directly to cucumber mixture, weight down with 1 pound can and let stand 1 hour to drain.
To prepare lamb loaf :
In large bowl, combine lamb and bread crumbs together and set aside.
In the food processor blender combine 1/2 cup of yogurt, celery, bell pepper, onions, oregano, tomato sauce, 1/2 teaspoon black pepper and remaining salt. ( 1 teaspoon ) puree until almost smooth.
Now, add yogurt mixture to the lamb mixture and mix well.
Transfer lamb mixture to loaf pan, pressing down firmly and bake for 1 hour.
Rinse cucumber by cold water, transfer to paper towels to drain.
Prepare sauce :
In small bowl, combine garlic, mint, cucumber and remaining yogurt and black pepper.
Let stand for 30 minutes.
Finally, remove from oven, let stand 15 minutes.
Cut loaf in to equal sizes ( 8 pieces ) serve with sauce.
