Rosemary Pork Stew

ROSEMARY PORK STEW


INGREDIENTS : 

  • Little bit of salt ( 1/2 teaspoon)
  • 1 cup diced parsnips
  • 1/4 teaspoon paprika
  • 1/4 mince fresh thyme leaves
  • 4 ounces potato ( pared and diced )
  • 1/4 teaspoon oregano, minced
  • 1 large diced onion
  • 1/4 teaspoon black pepper
  • 2 cups beef broth
  • 8-10 ounces boneless lean pork ( cut into 2" cubes )
  • 2-3 small plum tomatoes ( diced and seeded )
  • 2 medium fresh carrots
  • 2 teaspoons of olive oil
  • 1 tablespoon fresh rosemary leaves
  • 1 teaspoon minced fresh rosemary leaves and,
  • 2 large minced garlic cloves


METHOD : 


Combine salt, oregano, paprika, thyme and pinch of pepper on paper plate.
Add pork, turning to coat evenly.
In suitable saucepan, heat olive oil and add pork.
Cook over high heat and stirring frequently 2 minutes or longer until browned.
Add carrots, parsnips, onions and potato, cook stirring constantly 1 to 2 minutes until the vegetable soften.
 Add beef broth, garlic, rosemary tomatoes and 1/4 teaspoon of salt and pepper to pork mixture and bring liquid  to a boil.
The, reduce the heat to low, simmer, stirring occasionally 28 -30 minutes until pork cocked and vegetable tender.
Serve warm.
