TERIYAKI CHICKEN WITH PEACH SALSA
INGREDIENTS:
- 4 skinless boneless chicken breasts
- 1/2 cup teriyaki sauce and marinade
- 1 medium bell pepper ( cut in to strips )
- 8 ounces sliced, drained pineapple juice
DIRECTIONS:
Place chicken in shallow glass disk.
Pour teriyaki sauce over the chicken.
Turn chicken to coat with marinade, Cover and refrigerate 2 hours.
Heat gas grill. ( or coals )
Remove chicken from marinade, reserve marinade.
Cover and grill chicken, bell pepper strips and pineapple slices 4 to 6 inches from medium heat about 16 -20 minutes.
Brushing with marinade and turning occasionally, until chicken juice is no longer pink when centers of thickest pieces are cut.
Discard any remaining marinade.
Serve with bell pepper, pineapple and peach salsa.
Time : Preparation 5 min, Grill 20 min, Marinate 2 Hr
