Thai Chicken with Basil

THAI CHICKEN WITH BASIL



INGREDIENTS:


  • 1 pound skinless boneless chicken breast halves
  • 1/4 cups fresh chopped basil leaves
  • 1 tablespoon chopped fresh mint leaves
  • 2 tablespoons of vegetable oil
  • 3 chopped garlic cloves
  • 2 red seeded , chopped jalapeno chilies 
  • 1 tablespoon of fish sauce
  • 1 teaspoon brown sugar 
  • 2 medium chopped tomatoes.

DIRECTIONS:

Cut the each chicken breast half in to four pieces.
In a  12 inch skillet, heat vegetable oil over medium-high heat. 
Cook red chilies ( or green ) and chopped garlic in oil, stirring constantly until the garlic is golden brown. 

Then, add chicken pieces, stir-fry about 8-10 minutes or until chicken pieces are no longer pink in center.

Stir in fish sauce and sugar.
Sprinkle with tomatoes, basil and mint and serve with rice.
