Brunch - Blintzes Crepes
Ingredients
•12 ea Crepes
•1 ea Egg
•1 1/2 cup Cottage cheese
•2 tablespoon Sugar
•1/2 teaspoon Vanilla
•1/4 teaspoon Cinnamon
•1 cup Blueberry pie filling
•2 tablespoon Butter
•1 ea Egg
•1 1/2 cup Cottage cheese

Instruction
Use butter and grease a baking dish. In a large bowl, beat together eggs, cottage cheese, sugar, vanilla and cinnamon until smooth. Spoon cheese mixture into the center of each crepe. Roll crepe and bake seam side down and covered at 350° for 30-45min. Remove cover and broil for 3-5 min. Top with heated pie filling.
