Chinese cuisine, well something that I always love and crave for, at least once a week. Making Chinese food gives another high to me, the amazing flavors that go into any dish, there is sourness, tangy sweet, heat, nuttiness, and so many varied bursts of flavors, and for me balancing among these makes me innovate and take a dish to another level. Lemon basil chicken I've had at many Chinese restaurants and have always wanted to try for the simple reason of making it at home with simple fresh ingredients... For this dish fresh ingredients are the key... and the hero is the basil and the lemon... and what best than having to use organically homegrown basil and lemons. You can definitely pick up fresh lemons and basil from your grocery store or supermarket. Another important ingredient is the garlic and red chili paste. Its a blend of a handful of garlic with dried red chilies.

Ingredients
  • - for marination
  • - 500 gms chicken boneless ( cut into cubes washed and pat dried)
  • - 1 tbsp cornflour
  • - 2 tbsps flour
  • - to taste the salt pepper and
  • - oil for frying
  • - for the sauce
  • - 1 onion chopped
  • - 1 tbsp or to taste red chili garlic & paste
  • - 1/2 cup basil chopped
  • - 1 tsp soya sauce
  • - 1 tbsp tomato ketchup
  • - 1 tsp vinegar
  • - 1 tsp sugar/honey
  • - 1 lemon lime juice of or
  • - to taste salt
  • - 1 tbsp oil
Directions
  1. Mix the chicken with cornflour, maida salt, and pepper. marinate
  2. Heat oil in a wok. Deep fry the chicken. Drain and keep aside
  3. In a heated wok, add some oil, add the onions, soya sauce, red chili paste, tomato ketchup, vinegar, sugar, chopped basil, salt if required make a thick sauce.
  4. Now add the fried chicken. mix well until the sauce is well coated with the chicken
  5. Garnish with chopped basil and lemon juice
  6. Serve hot with fried rice or Hakka noodles
