Seafood Gumbo

SEAFOOD GUMBO


INGREDIENTS : 

  • 7 - 8 ounces of divined and peeled shrimp
  • 1 bay leaf
  • black pepper and red pepper
  • 1 teaspoon file powder 
  • 2 teaspoons vegetable oil
  • 2 medium chopped celery stalks
  • 1 /2 cup chopped green bell pepper
  • 2 ounces cooked, boneless lean ham, diced
  • 2 cups of okra ( cut in to 1" chunks )
  • crushed tomatoes 
  • 1 large chopped onion

METHOD : 

In large non-stick skillet, heat vegetable oil, add celery, bell pepper, ham and onion. 
Cook under medium heat, stirring frequently 7 -8 minutes until is get light browned.
Add okra, bay leaf, tomato, black and red peppers and 2 cups water, bring liquid to a boil.
Reduce heat to low, simmer, covered 13 -15 minutes until okra is tender. 
Stir file powder and shrimp in to tomato mixture. 
Cook stirring frequently 4-5 minutes until shrimp turn to pink color. 
Remove and discard bay leaf and slice in to 4 and serve.
