Homemade Meatball Stew

MEATBALL STEW



INGREDIENTS:


  • 8 ounces ground skinless boneless turkey breast 
  • 8 ounces lean ground beef
  • 1/4 cup of beef broth 
  • 2 ounces of long grained rice, uncooked
  • 1/4 freshly ground black pepper 
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon dried marjoram 
  • 1 medium minced onion
  • 1 cup pearl onions
  • 1/4 fresh parsley
  • 1/2 teaspoon salt
  • 2 small minced garlic cloves
  • 1 cup of baby carrots
  • 1 1/2 cups tomato sauce ( no added salt )
  • 2 celery stalks
  • 1/4 minced medium bell pepper

DIRECTIONS :


Combine turkey, beef, minced onion, green bell pepper, black pepper, salt, thyme, marjoram, parsley and rice, form into 10 - 12 meatballs and set set aside.

Heat oil in a large skillet, add pearl onions.
Cook over medium- heat, stirring frequently about 8-10 minutes until pearl onions are golden browned. 
Stir in carrots, tomato sauce, celery, broth and garlic, bring liquid to a boil. 

Add meatballs in a single layer. spoon liquid over meatballs.
Reduce heat to low, simmer , covered, basting  once or twice with the liquid about 40-45 minutes until vegetables are tender well and meatballs are cooked through ans serve.
