PORK CHOPS WITH ALMOND
INGREDIENTS:
- 4 Pork loin chops ( 1 inch thick )
- 1/2 cup chicken broth
- 2 tablespoons fresh chopped parsley
- 1/4 cup brow rice , uncooked
- 2 teaspoons dried marjoram leaves (chopped well)
- 2 tablespoons silvered toasted almonds
- 2 tablespoons dried and finely chopped apricots
DIRECTIONS:
In 1 1/2 quart saucepan, mix brown rice, chicken broth, apricots, marjoram and almonds.
Heat to boiling, reduce heat to low.
Cover and simmer about 10 - 12 minutes until rice is well tender.
Stir in parsley.
Cut a 3 inch pocket in each pork chop, cutting from fat sides almost to bone.
Spoon about 2 tablespoons rice mixture in to each pocket.
Secure pockets with toothpicks.
Set oven controlling to broil.
Place pork broiler pan rack. Broil with tops 5-6 inches from heat about 10 minutes, turn.
Broil about 10-15 minutes longer for medium doneness ( 160 degrees )
To serve now - heat preserves, brush over pork and serve. ( 4 servings )
