Brunch - Broccoli, Mushroom and Three Cheese Quiche

Ingredients

•1 ea Pie crust
• FILLING
•4 large Eggs
•1 1/2 cups Cream
•1/2 cup Gruyere cheese
•1 large head Broccoli
•3/4 cup Swiss Cheese
•1/2 cup Cheddar
•12 medium Mushrooms
•1 tablespoon Olive oil

Instruction

Use a ready-made crust. Preheat oven to 375°F. Steam the broccoli and fry the sliced mushrooms in the olive oil. Transfer both to a paper-towel-lined bowl to drain. (Too much liquid will make your final product too soggy.) In a bowl, whisk together the eggs, cream, salt and pepper to taste. Add the three grated cheeses to the egg mixture. Add the mushroom/broccoli mixture to the pie crust, spread evenly, and pour the egg/cheese mixture over the top to coat. Bake until golden and custard is set, about 30 minutes.
