LEMON DRILL CHICKEN
INGREDIENTS:
- 5-6 boneless, skinless chicken breast halves
- 1 tablespoon of lemon juice
- 2 medium sliced onions
- 1 tablespoon shredded cheese
- 1/4 teaspoon salt
- 1/2 cup of chicken broth
- 1/4 cup of butter ( or margarine )
- 1 tablespoon of chopped dried drill weed
DIRECTIONS:
Firstly, melt the butter in 10 inched skillet over medium heat.
Cook chicken in butter about 5-6 minutes and turning once until chicken light browned.
Mix chicken broth ( or dry white wine ), lemon juice, drill weed and 1/4 salt, pour over chicken.
Heat to boiling.
Reduce heat to low heat. Cover and simmer about 12 -15 minutes or until chicken juice is no longer pink when centers of thickest pieces are cut.
Remove chicken from skillet. ( keep warm)
Heat broth mixture to boiling. Boil it about 2-3 minutes or until reduced to about 1/2.
Pour over chicken. Sprinkle with sliced onion and cheese.
Serve hot.
