Penne and Tuna Sauce

PENNE WITH TUNA SAUCE



INGREDIENTS: 


  • 6 ounces penne pasta
  • 2 tablespoon rinsed drained carpers
  • 2 teaspoons olive oil
  • 3 medium, sliced onions
  • 1/4 cup minced fresh parsley
  • 4 tomatoes
  • 8 ounces drained water-packed , flaked white tuna chunk 
  • 3 minced garlic cloves

METHOD: 

In a large pot of boiling water cook penne about 10 minutes until tender well. 
Drain, reserving 1/3 cup liquid, set penne and reserved liquid aside.

Heat oil in a large non-stick skillet adding onions.
Cook over medium-heat, stirring frequently about 3-5 minutes until onions are softened. 

Add garlic, cook stirring frequently about 2 minute. Add tomatoes and cook stirring frequently  4 - 5 minutes until tomatoes are softened. 

Stir in capers and tuna, stirring frequently 2-3 minutes until mixture heated. 
Add cooked penne and reserved liquid to tuna mixture, cook tossing constantly about 1 minute, until pasta is heated through and well coated. 
Sprinkle with parsley, toss well to combine and serve.
