White Bean Sausage Stew

WHITE BEAN SAUSAGE STEW


INGREDIENTS:


  • 6 ounces cooked kielbasa ( cut in to small slices )
  • 12 ounces cooked white bean ( drained )
  • 1 bay leaf
  • 2 olive oil teaspoons
  • 3 small, chopped onions
  • 2 medium, chopped celery stalks
  • 1 1/2 teaspoons minced thyme
  • 2 cups canned of tomato sauce
  • 1 small chopped carrot
  • 3 minced garlic cloves

DIRECTIONS:

Preheat the oven to 350 degrees.
Heat olive oil in Dutch oven ( or ovenproof large pot ), add onions, carrot and celery.

Cook over medium heat, stirring frequently 8- 10 minutes until onions slightly brown.
Add garlic, cook, stirring frequently about 2 minutes.

 Add tomato,  bay leaf, thyme and kielbasa. 
Bake, covered about 45 minutes until the added flavors are well blended and mixture is heated through.

Remove and discard bey leaf, Divide among four plates and serve hot.
